PASTA PRIMARVERA | |
1 stick unsalted butter 1 med. onion, minced 1 lg. garlic clove, minced 1 lb. thin asparagus, tender point only, cut diagonally into 1/2 inch slices 1/2 lb. mushrooms, thinly sliced 6 oz. cauliflower, broken into florets 1 med. zucchini, cut into 1/2 inch rounds 1 sm. carrot, sliced 1 c. whipping cream 1/2 c. chicken stock 2 tbsp. fresh basil or 2 tsp. dry 1 c. frozen peas 2 oz. Prosciutto or cooked ham, chopped 5 green onions, chopped Salt and pepper 1 lb. Fettucini or Linguini 1 c. Parmesan cheese Cook onion and garlic in butter, add asparagus, mushrooms, zucchini, cauliflower, carrots, etc. Cook until tender, approximately 3 minutes. Add peas, ham, green onion, season to taste. Add whipping cream, heat thoroughly, add pasta and cheese. |
