PINEAPPLE COCONUT BARS | |
1/2 c. soft butter 1/4 c. sugar 1 1/4 c. flour 1 (#2) can crushed pineapple, drained 1 well beaten egg 1/2 c. sugar 1 tbsp. melted butter 1 1/2 c. shredded coconut Combine butter and sugar with fork; add flour and mix until crumbs are formed. Press evenly in bottom of ungreased 9"x13" pan with about 1/2" extending up the sides. Prick bottom with fork and bake in 350 degree oven for 15 minutes or until crust begins to brown. Cool slightly. Spread pineapple evenly over crust. Add sugar to egg and beat until well blended. Fold in butter and coconut. Spread this mixture over pineapple. Return to oven and bake 20 minutes or until topping is lightly browned. |
