BRAN MUFFINS 
1 c. sugar or 1 1/2 c. honey
2 3/4 c. flour
1/2 tsp. salt
2 1/2 tsp. baking soda
2 eggs
3 or 4 c. hard spring wheat bran (other bran will do)
2 c. buttermilk
1 tsp. baking powder
1/2 c. oil, sunflower best
1 c. boiling water
1 c. raisins or chopped dates

Pour boiling water over dates or raisins and add soda. Mix together other ingredients, add cooled raisin-date mixture and mix lightly. Pour in muffin tins. Bake at 375 degrees for 20 minutes. This recipe should make 24 muffins.
