ZUCCHINI CAKE 
3 1/2 c. flour
1 1/2 c. sugar
2 tsp. baking soda
1 tsp. baking powder
4 eggs
1 c. melted butter, cooled
2 c. grated zucchini
1 tsp. vanilla

In a large bowl, mix dry ingredients. Add eggs, butter, zucchini and vanilla. Mix well. Dough will be soft. Spread into 2 well-greased loaf pans. Bake at 350 degrees for 40 minutes or until tester comes out clean. Makes 2 loaves.

OPTIONAL: 1 cup raisins and/or 1 cup walnuts may be added.
