ZUCCHINI BREAD 
1 c. oil
3 eggs
2 c. sugar
2 c. grated raw zucchini
2 tsp. vanilla
3 c. flour
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp. salt
3 tsp. cinnamon
1 c. chopped nuts
1/2 c. raisins

Blend oil, sugar, then eggs one at a time. Add zucchini. Sift flour, soda, baking powder, salt and cinnamon. Add to first mixture, then add vanilla, nuts and raisins.

Spoon into 2 loaf pans. Bake in preheated oven at 325 degrees for 1 hour and 10 minutes. Cool. OR Spoon into 2 (1 pound) coffee cans sprayed with cooking spray for round loaves.

For a gift: Leave bread in coffee cans, close with plastic lid, gift wrap and place bow on top.
