BANANA RAISIN MUFFINS 
2 c. all purpose flour
2 tbsp. baking powder
3/4 tsp. cinnamon
1/2 tsp. salt
1/2 c. sugar
1/2 c. reduced calorie butter (tub)
1 egg
1 tsp. vanilla
3 med. bananas, peeled and mashed
2/3 c. ready to eat wheat flake cereal
1/2 c. raisins

Preheat oven to 400 degrees. In a bowl, sift together flour, baking powder, cinnamon and salt; set aside.

In a medium bowl, combine sugar, butter, egg and vanilla and using electric mixer, beat until light and fluffy. Add bananas and stir to combine; add flour mixture and beat until well blended. Stir in cereal and raisins. Spray 12 (2 1/2 inch diameter) muffin pan cups with nonstick cooking spray, or line muffin pan cups with liners; fill each cup with an equal amount of batter. Bake 20 to 25 minutes (until muffins are lightly browned and a toothpick, inserted in center, comes out dry.) Remove muffin to wire rack to cool. Makes 12 muffins.
