APPLE PIE IN A BAG
1 unbaked 9 inch pie shell with fluted edge
2 1/2 lbs. cooking apples
1 c. sugar
1/2 c. + 2 tbsp. flour
1/2 c. very soft butter
Lg. brown bag
1/2 tsp. nutmeg
1/2 tsp. cinnamon
2 tbsp. lemon juice

Preheat oven to 400 degrees. Quarter apples and cut each quarter into 4 pieces, making 7 cups of chunks. In large bowl, toss apples with 1/2 cup sugar, 2 tablespoons flour, and nutmeg and cinnamon until apples are coated. Fill pie shell with apples, piling them high in center of shell. Sprinkle them with lemon juice. Thoroughly mix 1/2 cup each sugar, and flour, and butter into a soft paste - spread over the top of the piled apples. Place pie in bag, closing open end. Set on rack in center of oven and bake 1 hour, or until pie is nicely browned and apples are soft.
