OATMEAL MUFFINS 
1 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt
4 tbsp. brown sugar
1 c. quick cooking oats
1 egg, beaten
1 c. milk
1/4 c. melted fat

Sift dry ingredients together, add milk, egg and fat stirring only enough to moisten. Fill greased muffin pans 2/3 full. Bake at 400 degrees about 20 minutes. Makes 12 medium sized muffins.
