CREOLE GUMBO 
2 tsp. corn oil
2 tbsp. all-purpose flour
1 onion, chopped
1 stalk celery, chopped
1 sm. sweet pepper, chopped
1 clove garlic
2 med. fresh tomatoes, peeled & chopped
3/4 c. smoked sausage
1/2 c. ham, cubed
3 lbs. chicken wings
1 qt. plus 3 c. hot water
Salt & pepper to taste
1/2 tsp. browning sauce

Make a roux with oil and flour, stirring constantly until the color of a copper penny. Add onion, celery and sweet pepper. Saute for 5 minutes. Add tomatoes, sausage, ham and chicken. Saute for 20 minutes. Add water, salt and pepper and browning sauce. Simmer for 30 minutes. Serve with rice. Serves 8.
