LOW COUNTRY PECAN PIE 
1/2 c. flour
1/2 c. clarified butter
3 eggs
2 c. heavy cream
1 tbsp. vanilla extract
1/2 c. bourbon
1 c. sugar
1/2 tsp. salt
1 c. brown sugar
2 c. chopped pecans

Beat eggs and sugar well; add cream, brown sugar, salt, vanilla, bourbon, and roux. Mix well; pour into basic pie shell. Add pecans.

Bake at 350 degrees for 35-40 minutes. Makes enough custard for two pies.
