CONGEALED BEET 
1 pkg. lemon Jello
1 c. boiling water
3/4 c. beet liquid
1/2 tsp. salt
2 tsp. grated onion
1 tbsp. horseradish
3/4 c. diced celery
1 c. cooked diced beets
3 tbsp. vinegar

Dissolve gelatin in hot water, add beet liquid, vinegar, salt, onion, horseradish. When slightly thickened, fold in celery and beets. Chill until firm. Serve with fish and seafood.
