EGGS BURRITO 
1ST LAYER:

6 eggs
3 tbsp. milk
2 tbsp. chopped green pepper
1 tbsp. pimento, chopped
3 tbsp. chopped onion
2 dashes hot sauce, or to taste

2ND LAYER:

1/2 lb. lean ground beef
Salt and pepper to taste
1 tbsp. chili powder
1/4 c. chopped onion
1 can (8 oz.) tomato sauce
2 tbsp. chopped green chilies

3RD LAYER:

3/4 c. shredded Cheddar cheese
1/2 c. diced tomatoes
Shredded lettuce
Ripe olives, sliced

Combine eggs, milk, green pepper, pimento, onion and hot sauce in bowl. Pour into heated skillet; scramble until fluffy but still moist and underdone. Turn egg mixture into a buttered 9x9 inch pan. Cover with foil and set aside.

Brown ground beef; drain. Add salt, pepper, chili powder, onion, tomato sauce and chilies. Bring to a boil and simmer until thick. Pour chili mixture over the egg mixture and place in 350 degree oven for 10-15 minutes. Remove from oven, let set 5 minutes.

Layer top with shredded cheese, diced tomatoes, lettuce and olives. Before serving, place a dab of sour cream on each serving. Makes 6 servings.
