EGG & HOMINY BREAKFAST BURRITOS 
6 eggs
6 slices bacon, chopped
1 cup cheddar cheese, shredded
1/4 cup onion, finely chopped
1 (15 oz.) can white hominy, drained
"Mexican seasoning", to taste (1 use about 1/2 tbsp.)
salt, to taste
flour tortillas

The seasoning I use is a generic "Mexican seasoning" found at Safeway grocery stores. It is a blend of onion, garlic, basil, cumin, red pepper, oregano, jalapeno and cilantro. Any similar product will work.

Chop bacon into thin strips and cook. Beat eggs and add Mexican seasoning and cheese.

Set eggs aside, and chop onion. Drain cooked bacon, and add onions. Cook till onions are translucent, then add eggs and stir well. When eggs begin to thicken, add hominy. Cook until eggs are done.

Spoon the mixture into flour tortillas and enjoy!

The number it makes depends on how full you like your tortillas, I usually get 8-10 out of this recipe.

These freeze VERY well, and a minute or two in the microwave gives you a great breakfast you can enjoy on the go!
