CHOCOLATE POTATO CAKE 
2/3 c. butter or shortening
2 c. sugar
4 eggs, separated
1 c. hot mashed potatoes
2 c. flour
2 tsp. baking powder
1/4 tsp. salt
1/2 c. ground cocoa
1/2 c. sweet milk or coffee
1 c. chopped nuts
1 tsp. cinnamon

Cream butter and sugar. Add well beaten egg yolks. Add hot potatoes in which cocoa has been mixed. Sift dry ingredients 3 times. Add alternately with milk or coffee. Fold in stiffly beaten egg whites. Bake in 350 degree oven for 30 minutes in layer pans or oblong pan. Spray or grease and flour pans.
