PINEAPPLE UPSIDE DOWN CAKE 
1/4 c. butter
1/2 c. firmly packed brown sugar
1 (8 1/2 oz.) can sliced pineapple, drained and juice reserved
Maraschino cherries
1 (9 oz.) pkg. yellow cake mix (1 layer size)
1/2 c. (reserved) pineapple juice
2 eggs

Combine butter and brown sugar in 8 x 8 inch baking dish. Microwave 1 minute, 30 seconds to 2 minutes on High, or until butter melts. Stir. Arrange pineapple rings in syrup. Place maraschino cherries in center of each ring. Blend cake mix, pineapple juice and eggs in medium mixing bowl on low speed of electric mixer. Beat on medium speed two minutes. Pour evenly over fruit. Microwave 8 1/2 minutes to 10 minutes on High or until wooden toothpick inserted comes out clean, rotating dish 1/2 turn after 5 minutes. Immediately invert onto serving plate and remove dish. Serve warm or cooled to room temperature with whipped cream if desired. Makes 9 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
