MOCK RASPBERRY JAM 
3 lbs. green tomatoes
2 c. sugar (low calorie sugar substitute may be used equal to 2 c. sugar)
1 (3 oz.) pkg. raspberry flavored gelatin (can be sugar free)

Core tomatoes and cut into chunks. Process in blender until you have 2 cups. Boil 2 cups blended tomatoes with sugar for 15 minutes. Remove from heat and add powdered gelatin. Pour into clean containers. Refrigerate or freeze. Makes 2 pints.
