RICE CHEDDAR CASSEROLE 
1 c. cooked rice, cold
2 eggs (can be separated and whites beaten)
2 tbsp. butter, melted
1/2 c. milk
1 c. shredded cheese
Salt to taste

Combine all ingredients gently fold in egg whites last if you beat them separate). Pour into lightly greased casserole dish. Bake at 325 degrees for 30 to 40 minutes or until firm in center (knife inserted will come out clean). Can be microwaved in approximately 10 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
