MAMA'S COCONUT PIES 
Makes 2

1 1/2 c. sugar
4 tbsp. flour
1 can Pet milk
1/2 c. butter
3 c. sweet milk or more
2 tsp. of vanilla flavoring
6 eggs
Separate 4 whites for meringue
1 pkg. coconut

Mix sugar and self-rising flour, add eggs and beat until creamy. Stir in milk and vanilla flavoring and cook in double boiler until thick, add butter and coconut last. Stir to keep it from being lumpy. Cook pie crust or use vanilla wafer crust. Beat the 4 egg whites until stiff and 8 tablespoons of sugar and beat add 1 teaspoon vanilla. Spread over pie and brown. Add 2 tablespoon of sugar for each egg white. Bake at 350 degrees.
