BREAKFAST CASSEROLE 
2 tbsp. butter
1 c. shredded Swiss cheese
1 c. shredded sharp process American cheese
12 eggs
1 (12-16 oz.) roll breakfast sausage
1 (4 oz.) can mushrooms, drained
2/3 c. half and half

Spread 2 tablespoons butter in a 13 x 9 dish. Combine cheese and sprinkle 1/2 over butter in dish. Break eggs on top of cheese; poke yolks but do not stir. Sprinkle with salt and pepper. Slice breakfast sausage into 16 pieces and fry. Place on top of eggs and put mushrooms on top of sausage. Pour half and half over and top with remaining cheese.

Bake at 350 degrees for 30 minutes or until golden brown. Let stand for 5 minutes. Serves 15.
