CINNAMON ROLLS 
1/4 tsp. baking soda
1/4 c. white sugar
1/2 tsp. salt
1 pkg. dry yeast
2 1/2 c. flour
1 c. buttermilk
3 tbsp. salad oil

TOPPING:

2 tbsp. water
1/4 c. melted butter, divided
1/2 c. brown sugar
1 tsp. cinnamon
1/2 c. chopped nuts (optional)

Mix baking soda, white sugar, salt, yeast and flour together in a large bowl. Heat oil and buttermilk until lukewarm. Pour into flour mixture and mix well. Knead until dough is smooth and elastic (add additional flour as necessary, approximately 2 to 3 cups). Put dough in greased bowl, turn so greased side is up, cover and let rise until doubled. Punch down. Roll dough out into a 15 x 12" rectangle. Mix water with half of butter, half of brown sugar and half of nuts (optional) and put in the bottom of a 9x13" pan. Mix cinnamon with remaining butter, brown sugar and nuts, spread over dough. Roll up from long side, pinch to seal and slice. Put slices into pan and let rise 30 to 45 minutes. Bake at 350 degrees for approximately 25 minutes. Turn out of pan immediately. Serve warm.
