CINNAMON CARROT BREAD 
3 eggs
2 c. sugar
1 1/2 c. salad oil
2 c. grated carrots
18 oz. can crushed pineapple
3 c. flour
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon
3 tsp. vanilla
1 c. chopped nuts

Combine eggs, sugar, oil and mix well. Add carrots and pineapple. Sift together the dry ingredients and add to first mixture. Add vanilla and nuts. Grease pans well. Bake at 325 degrees, 1 1/2 hours.
