DANISH APPLE CAKE | |
1 cube butter, softened 3/4 c. sugar 2 eggs 1 lemon plus rind & juice of lemon 1 c. flour Pinch of salt 5 apples 1/4 c. cinnamon sugar (equal parts) 2 tbsp. butter, additional Cream butter and sugar until light and fluffy. Beat in eggs, one at a time. Grate lemon rind, add to batter and 2 tablespoons lemon juice. Beat in flour and salt to form a soft batter. Peel, core and thinly slice apples, toss with lemon juice. Butter 9" springform pan or dorp bottom pan. Pour in batter and top with apple slices. Top with additional butter. Bake at 350 degrees for 1 hour or until sides pull from pan. Sprinkle with cinnamon sugar. |
