WALDORF ASTORIA STEW 
3 lbs. beef, cut in sm. pieces (chuck or round steak)
1 c. chopped celery
4 med. potatoes, cut in bite-size pieces
1 tsp. salt
Pepper to taste
2 med. onions, chopped
2 carrots, bite-size pieces
2 tbsp. tapioca
1 can tomato soup
3/4 c. red wine or water

Put meat and vegetables in layers in a large casserole or Dutch oven. Sprinkle with seasonings and tapioca. Combine soup and wine or water and pour over stew. Cover top of pan with foil and then put lid on tight. Cook 5 hours in 250 degree oven. This makes its own gravy. DO NOT brown meat before cooking.
