FRUIT AND BERRY PIES 
4 c. prepared berries or fruit (5 c. for deep dish)
2 c. brown sugar
1/4 tsp. salt
2 tbsp. quick-cooking tapioca
1 tbsp. butter
Unbaked pastry for top and bottom crust

Sliced strawberries, sliced peaches, slightly mashed blackberries.

Combine fruit, sugar, salt and tapioca. You can use less sugar or tapioca depending on sweetness and juiciness of fruit being used. Mix thoroughly.

Line pan with pastry or use frozen pie crust and fill with fruit mixture. Dot with slivers of butter. Place top crust or arrange strips of pastry.

Bake in 450 degree oven for 10 minutes (for berries and soft fruit), 15 minutes (for harder fruits). Reduce heat to 350 degrees and brush pie with melted butter and sprinkle with sugar. Return to oven 15 minutes (for berries and soft fruit), 25 minutes (for harder fruits).
