BLUEBERRY MUFFINS 
1 3/4 c. flour
2 1/2 tsp. baking powder
2 tbsp. sugar
3/4 tsp. salt
1 beaten egg
3/4 c. milk
1/3 c. melted shortening
1 c. blueberries (fresh or canned)

Sift together flour, baking powder, sugar and salt. Add egg, milk and shortening all at once. Stir in blueberries. Fill greased or cupcake paper lined muffin pans 2/3 full.

Bake at 400°F for 25 minutes. Or use Duncan Hines muffin mix if in a big hurry. Quick and easy!

Yields 1 dozen.
