PANCIT (A FILIPINO RECIPE) | |
3 lb. pork steaks, cut in 1/2 inch strips, all fat removed 1/2 lb. edible pea pods (remove strings, if necessary) 1/4 lb. mushrooms, wash and sliced 1 c. celery, chopped 1 lg. onion, diced 1 lg. clove garlic, crushed 1 bunch broccoli, cut in bite-sized pieces 1 bunch asparagus, cut in bite-sized pieces (remove tough, white ends of stalk) 1/2 c. red bell pepper, cut in strips 1/2 c. green bell pepper, cut in strips 1/2 c. yellow bell pepper, cut in strips 1 med. zucchini, cut in 1/8 inch slices 4 med. carrots, thinly sliced 1/2 tsp. ground ginger 1 tsp. curry powder 1/4 tsp. ground cloves 1/4 tsp. ground allspice 2 tsp. cornstarch, dissolved in a little cold water 4 pkgs. pork-flavored Ramen, with seasoning packets 2 or 3 tbsp. soy sauce You may add or substitute any vegetables you prefer. Saute pork, onions and garlic in the soy sauce until pork is done. Add vegetables which take longest to cook first. For example, asparagus, broccoli, carrots, then the celery, peppers, etc. Stir fry all the while, until vegetables are crisp-tender. Do not over cook! While vegetables are cooking, add dissolved cornstarch and condiments. Cook the Ramen noodles according to package directions. Drain, add seasoning packets. Just before vegetables are done, add noodles, stir gently, cook just a few minutes more. Remove from heat and let stand a few minutes to blend flavors. Serve. Serves about 8. |
