CHICKEN PICCATA 
1 lb. chicken cutlets
1 c. flour
1 tsp. salt
1/2 c. butter
1/4 c. oil
1 c. chicken broth
2 tbsp. lemon juice
1 oz. parsley

Dredge chicken in flour and salt. Brown chicken in butter and oil. Add chicken broth and simmer for 10 minutes. Add lemon juice and parsley. Serves 4. Enjoy!
