MOCK PECAN PIE 
1/2 stick (1/2 c.) butter
1 c. sugar
3/4 c. corn syrup
1/2 c. milk
1/2 tsp. cinnamon
1/2 tsp. salt
3 eggs
2/3 c. oatmeal
1/2 c. cut up pecans
1/4 c. coconut

Combine sugar, syrup, butter, cinnamon and salt. Mix well. Add slightly beaten eggs.

Mix together oatmeal, coconut and pecans. Fold into sugar mixture. Pour into unbaked pie shell. Bake at 400 degrees for 15 minutes then 350 degrees for about 40 minutes more.
