APPLE DUMPLINGS | |
7 oz. all-purpose flour A pinch of salt 2 oz. lard mixed with 2 oz. butter Water to mix 4 lg. apples 2 oz. sugar A little milk A little sugar Heat oven to 425 degrees. Grease baking tray. Sift flour and salt, cut fat into small pieces and add to flour. Using fingertips only, rub fat into flour until mixture resembles bread crumbs. Add water 2 teaspoons at a time, stirring with a knife until mixture sticks together. Using one hand collect mixture together and knead lightly to make a smooth firm dough. Divide into four portions. Roll out each and cut into a round, use a sauce to judge size. Core and peel apples. Place on each round and fill center with sugar and 1 teaspoon of water. Moisten edges of pastry with water and carefully gather them to the top of the apple pressing firmly together. Turn dumplings over - put on the tray, brush with milk and bake in the center of the oven for 10 minutes; lower temperature to 325 degrees and cook a further 30 minutes. Dredge with sugar before serving. |
