NO CREAM SOUP CASSEROLE | |
My out of Condensed Cream soup Casserole or I ain't (it is a word too) got any creamed soup so this is what I do casserole... 3 cups frozen hash browns or French fries 8-16 oz shredded cheese (or cubed Velveeta) 1 cup cubed bologna, leftover cubed chicken, ham or 1 pound cooked drained ground meat You can use 1-2 (15 oz) cans corn, mushrooms, great Northern beans, green beans, mixed vegetables or any combination (drained) or equivalent leftover veggies you might want to use. I have used frozen chopped broccoli... 1 can veggies and 1/2 cup cooked rice works to stretch food dollars too! (I freeze leftover bits of meat and veggies and make a casserole when I have enough leftovers too). 1/4 cup onion, chopped or 2-3 tbsp. minced dried onions 4 beaten eggs 1 (12 ounce) can evaporated milk 1/2 teaspoon garlic and/or onion powder 1/4 teaspoon black pepper (or to taste) 1/2 teaspoon salt (omit if using garlic or onion salt). Cooking spray or cooking oil Grease a 2-quart rectangular baking dish with cooking spray, oil or use coated disposable aluminum pan. Arrange potatoes evenly on bottom of baking dish. Sprinkle with cheese over the top of meat (s), veggies, & onions. Combine milk and eggs and seasonings. Pour over potatoes and cheese. For best results, refrigerate overnight to allow flavors to meld together; other-wise just bake it covered in aluminum foil. Bake at 350°F for 40-50 minutes until set and egg mixture is fully cooked. Let rest for 10 minutes prior to serving. Optional: serve with a dollop of sour cream! Variations: 1 small can Coney Sauce, 1 tablespoon chili powder added to a can of corn. Top with Fritos and bake uncovered. Serve on a bed of Fritos or smother cornbread! 1 (10 oz) can Dollar Tree beef hash added over potatoes if extra meat is desired (heated and grease drained). 1 can Ranch beans for spiciness 1 can Rotelle to corn and top with Fritos Top with tater tots and bake uncovered! Top with french fried onion rings, baked uncovered. Top with 1 cup crushed cornflakes mixed well with 1 Tablespoon butter! Crackers? Potato Chips? ETC!!! Submitted by: DaViD Lee GooDwin |
