PECAN SNOWBALL COOKIES 
Very rich, great with tea or coffee. A Christmas favorite!

1 lb. butter, softened
1 c. powdered sugar (will need more to coat warm cookies)
2 c. pecans, ground (or can use almonds or walnuts)
3 c. flour
2 tsp. vanilla

Cream together butter and powdered sugar; mix in nuts and flour. Add vanilla. If sticky, chill for 1/2 hour. Roll into small balls (rounded teaspoonful). Place on ungreased cookie sheet. Do not flatten.

Bake in a pre-heated 375°F oven for 8-10 minutes. While still warm, gently roll in powdered sugar.
