BROCCOLI BREAD | |
2 lbs. bread dough 1 lb. chopped cooked broccoli 2 potatoes, cut into 1 inch pieces and cooked until done 2 tsp. salt 1 tsp. pepper 2 tbsp. olive oil Let dough rise for at least 1 hour covered. Mix together broccoli, potatoes, and salt and pepper. Add 1 tablespoon olive oil. Spread 1 tablespoon olive oil into large cookie sheet. Set aside. Gently roll one pound of dough out onto lightly floured surface into large rectangle. Repeat with other 1 pound piece of dough. Spread broccoli potato mixture evenly over each rectangle, to within 2 inches of edges. Roll up each one lengthwise. Carefully seal sides under. Place each onto cookie sheet. Bake for at least 30 minutes, or more, until bread is well browned on all sides, in 375 degree oven. |
