IMPERIAL CRAB STUFFED POTATOES 
3 lg. baking potatoes
1/2 lb. crabmeat
3/4 c. sour cream
1/4 c. chopped green pepper
1/4 tsp. black pepper
3/4 c. grated Cheddar cheese, divided
1/2 c. milk
3/4 tsp. Old Bay seasoning
1/4 c. mayonnaise
1/2 tsp. salt
2 beaten egg whites
Green pepper for garnish

Preheat oven to 400 degrees. Wash potatoes and bake at 400 degrees for 1 hour or until done. Cut potatoes in half lengthwise and carefully scoop out potato. Set shells aside.

In a large mixing bowl, put potato and milk and mash well. Stir in crabmeat and Old Bay seasoning. Add sour cream, mayonnaise, green pepper, salt and pepper and mix well.

In a small bowl, beat egg whites until foamy and stir into crab mixture. Mix in 1/2 cup grated cheese. Fill empty shells with crab mixture and top with remaining 1/4 cup cheese. Garnish with a green pepper ring.

Place potatoes on a baking pan, reduce oven to 350 degrees and bake until brown, approximately 20 minutes. Serve hot as a main or side dish. Yield: 3 main dish or 6 side dish servings.
