PICNIC SALAD 
1 pkg. frozen cheese tortellini
3 hard boiled eggs, diced
1 c. red onion, diced
1 stalk celery, diced
1/2 c. green olives, sliced with pimento
2 med. cooked potatoes, skinned and cubed
3/4 c. mayonnaise
Salt and pepper to taste, approximately 1/4 tsp. each
Meat, optional

Cook tortellini according to directions on package rinse with cold water, drain. Mix tortellini with 1/2 cup mayonnaise, cover and set aside to cool for 1/2 hours. Combine tortellini, onion, celery, olives, potatoes, salt and pepper and remaining mayonnaise. Mix thoroughly, then toss in eggs. Add more mayonnaise if desired and serve at room temperature. Serves 8 as a side dish. For a main dish, try adding ham chunks. Serves 4.
