SWEET PICKLED BEETS II 
1 c. vinegar
1 c. water
1 c. sugar
2 qts. beets

To skin beets drop into boiling water until skin removes easily. Slice beets or leave whole. Boil together vinegar, water and sugar. Put in beets and bring to a boil. Put in jars and seal. Makes 1/2 gallon.
