SWEET BEET PICKLES 
2 c. vinegar
1 lemon, sliced thin
2 c. water
2 1/2 c. sugar
1 tbsp. cinnamon
1 tsp. cloves
1 tsp. allspice
Sm. whole beets

Cook beets until tender. Plunge in cold water and remove skins. Cook 15 minutes in pickling syrup made of remaining ingredients. Pack in jars. Seal while hot. Before using, chill in refrigerator. These are crisp and delicious.
