LOBSTER BISQUE 
3 tbsp. butter
1 carrot, sliced
2 scallions, chopped
1 lb. uncooked lobster meat
1/4 c. uncooked brown rice
1 tsp. thyme
1 bay leaf pepper to taste
Dash of paprika
3 parsley spigs
2 medium sized fresh tomatoes, chopped
8 c. water
3/4 c. half & half or 3/4 c. evaporated skim milk

Melt butter in large soup pot. Add carrots, scallions, and lobster; saute lightly. Add uncooked rice, herbs, seasonings, tomatoes, and water. Simmer, uncovered, for 40 minutes.

Remove the bay leaf and parsley. Next, puree the mixture through a strainer/food mill or easy on blender. Return to pot; add half & half or skim milk and cook over low heat just until heated through. Do not boil. 10 servings.
