ZUCCHINI CASSEROLE 
6 c. zucchini, diced
1/4 c. chopped onion
1 can cream of chicken soup
1 c. sour cream
1 c. shredded carrots
1/2 c. melted butter
1 pkg. Stove Top stuffing mix

Cook zucchini and onion 5 minutes and drain. Add soup, sour cream, and carrots to zucchini and onions. Mix together melted butter and stuffing mix. In casserole, put half of stuffing mix. Spoon vegetable mixture over. Garnish with rest of stuffing mix. Bake at 350 degrees for 25-30 minutes.
