CHINESE CHICKEN CASSEROLE 
3 c. chicken or turkey, cooked and cubed
2 tsp. lemon juice
1 tbsp. soy sauce
1/2 c. green onion, chopped
1 c. celery, chopped
1 can (5 oz.) water chestnuts, sliced
1 lbs. can bean sprouts, drained
1/2 tsp. salt
1/4 tsp. pepper
1 c. mayonnaise
1/4 c. almonds, chopped toasted
1/2 c. chow mein noodles

Sprinkle chicken with lemon juice and soy sauce. Cover and chill 2 hours or longer. Add green onion, celery, water, chestnuts, bean sprouts, salt, pepper, mayonnaise. Mix lightly but thoroughly. Turn into greased 1 1/2 quart casserole. Sprinkle with almonds and noodles. Bake at 350 degrees for 25 minutes.
