CHICKEN STIR FRY 
2 lb. uncooked turkey or chicken breasts, cut into thin strips
3 tbsp. oil (per serving)
1 red pepper, sliced
1 1/2 c. cabbage, chopped
1/2 c. diamond walnuts

MARINADE:

1/3 c. soy sauce
1/3 c. ketchup
1/2 c. scallions, sliced
1 tsp. garlic, crushed
1 tbsp. crushed red pepper
2 tbsp. water
1 tbsp. sugar

1. Combine all marinade ingredients.

2. Add chicken and marinate in refrigerator several hours or overnight.

3. Prepare servings in batches of 3 or 4. For each serving heat oil in wok or heavy saute pan until hot. Add chicken and stir fry for 3 minutes. Add oil if needed and stir fry peppers for 2 minutes. Stir in cooked chicken. Add walnuts and cabbage. Stir fry 1 minute. Serve immediately over rice.
