OYSTER BEEF W/PEAS AND MUSHROOMS 
1 piece flank steak (1 1/4 lb.), cut down center lengthwise, then sliced into 1/8" thick slices cross grain

Ingredients A: (Marinade):

1 tbsp. soy sauce
1 tbsp. cornstarch
Dash of MSG
Generous gratings of fresh ginger
Dash salt
1 tbsp. oil

Ingredients B: (Gravy):

1 tbsp. soy sauce
1 tbsp. cornstarch
1 tsp. sugar
2 tbsp. oyster-flavored sauce
3/4 c. water

5 lg., dried black oriental mushrooms (soaked in warm water for 20 min., squeezed dry & sliced thin)
2 c. edible pod peas (ends & strings removed) (OR substitute reg. green peas, shelled)

1. Marinate meat slices for 15 minutes in Ingredients A (marinade).

2. Heat pan on high heat. Add 1 tablespoon oil, slosh around. Add mushrooms. Stir-fry for 1 minute. Remove to serving platter.

3. Clean pan. Reheat on high heat. Add 1 tablespoon oil. Slosh around. Stir-fry meat for 3 minutes. Should be slightly pink. Add Ingredients B (gravy), peas and mushrooms.

4. Continue to stir-fry for a few minutes. Remove to platter. Garnish with a few chopped green onions, if desired.
