CROCK POT HAM & SCALLOPED
POTATOES
 
6 to 8 slices ham
8 med. potatoes, peeled, sliced thin
Salt & pepper
2 onions, peeled, sliced thin
1 c. grated cheddar cheese
1 (10 oz.) can cream of mushroom soup
Paprika

Layer half of ham, potatoes and onions in crock pot. Sprinkle with salt and pepper, then half of grated cheese. Repeat layers again. Spoon undiluted soup over top. Sprinkle with paprika. Cover and cook on low 8 hours; or high for 4 hours.

Was a little concerned about the setting for 4 hrs on high but left the house and returned 4 hours later, potatoes were done, and were delicious, best ever! I did go a little light on the cheese and added 1/2 cup of water for moisture.

I made this recipe in the crock pot, cooked it 8 hours and it was fantastic....all the flavors blended together for a great casserole meal. I used 98% fat free mushroom soup served it with applesauce for a little added sweetness....I would definitely recommend this for a low fat, low calorie meal...

I am going to try this recipe, but substitute 2 cans of Corned Beef in place of the ham. Am going to also take previous comment and add sliced mushrooms and some thyme. I have company arriving this Sunday and I think this will make food preparations much easier. All I will need to add will be a salad/rolls/ dessert.

This recipe seemed pretty good but I left out the cheddar cheese (because after all, if there is cheese they are augratin) and replaced with sliced fresh mushrooms and also added thyme along with the salt and pepper.
