BLUEBERRY MUFFINS 
1 3/4 c. sifted all-purpose flour
2 1/2 tsp. baking powder
3/4 tsp. salt
1/4 c. sugar
1 egg, well beaten
1/3 c. salad oil
3/4 c. milk
1 c. fresh blueberries or well drained frozen berries
2 tbsp. sugar
1 tsp. grated lemon rind

Combine all dry ingredients by sifting into bowl. Mix egg, milk and oil. Blend into dry ingredients. Combine blueberries, sugar and lemon rind. Fold in. Fill muffin tins lined with paper muffin cups 2/3 full. Bake in upper section of oven at 400 degrees for 25 minutes. If desired, while muffins are warm, dip tops in warm melted butter and swirl top of muffin lightly in sugar. Moist and delicious.
