BLUEBERRY MUFFINS 
1 3/4 c. flour
1/3 c. sugar
1 tbsp. baking powder
1 egg
3/4 c. milk
1/3 c. oil
1 tsp. grated lemon peel
1 (8 oz.) pkg. cream cheese, cubed
3/4 c. fresh or frozen blueberries
1 tbsp. lemon juice
3 tbsp. sugar

Heat oven to 400 degrees. Mix flour, 1/3 cup sugar and baking powder in large bowl. Beat egg in small bowl; add milk, oil and peel. Add to flour mixture, mixing just until moistened. Fold in cream cheese and blueberries.

Spoon into greased muffin pan, filling each cup 2/3 full. Bake 20 minutes or until lightly browned. Mix juice and 3 tablespoons sugar. Brush on muffins; cool. Makes 12 muffins.
