BLUEBERRY MUFFINS | |
1 c. flour 2/3 c. granulated sugar 1 tsp. baking powder 1 tsp. cinnamon 1/2 c. powdered sugar 1 tsp. lemon juice 1/4 tsp. salt 1 egg, beaten 1/2 stick butter, melted (1/4 c.) 1/2 c. sour cream 1 c. blueberries 1 tsp. grated lemon rind Mix flour, granulated sugar, baking powder, cinnamon and salt. Add egg, butter, sour cream. Fold in berries. Bake at 375 degrees for 30 to 40 minutes. Makes 12 muffins. Cool. Cover with glaze: powdered sugar, lemon juice and rind. About 1 teaspoon glaze per muffin. Let stand until hard. |
