SUGAR COOKIES 
3 egg whites
2/3 c. vegetable oil
2 tsp. vanilla extract
1 tsp. grated lemon rind, optional
3/4 c. sugar
2 c. all-purpose flour
2 tsp. baking powder
1/4 tsp. salt

Beat egg whites in mixing bowl with fork. Stir in oil, vanilla and rind. Blend in sugar until mixture thickens. Stir together flour, baking powder and salt; blend into egg white mixture.

Drop dough by teaspoonfuls about 2 inches apart on ungreased baking sheet. Flatten with oiled bottom of glass dipped in sugar. Bake at 400 degrees for 8- 10 minutes or until a delicate brown. Remove from baking sheet immediately and cool on rack. Makes about 4 dozen cookies.
