SISTER LILLIE'S APPLE CAKE 
1 1/2 c. oil
2 c. sugar
3 eggs
3 c. all-purpose flour
1 tsp. salt
2 tsp. baking soda
3 c. grated apples (grated on big side of grater)
1 c. chopped black walnuts
2 tsp. vanilla
1 c. raisins (optional), soak in hot water
1 c. angel flake coconut (optional)

Beat oil, sugar, and eggs 2 minutes. Add flour, salt, and soda and beat until well blended, approximately 2 minutes. Add apples, walnuts, and flavoring; mix well.

Pour into a greased 13 x 9 baking pan. Bake for approximately 1 hour 25 minutes at 325-350 degrees.

GLAZE FOR TOPPING:

Combine 1 stick butter, 1 cup brown sugar, and 2 tablespoons milk in saucepan. Bring ingredients to rolling boil for a few seconds. Remove from heat, cool and spread on cake.
