SUPERIOR RAW APPLE CAKE 
2 c. sugar
1 c. shortening
2 eggs, beaten
4 c. raw apples, pared and diced
2 tsp. vanilla
1 tsp. butter flavoring
1/2 tsp. black walnut flavoring
3 c. flour, sifted
2 tsp. cinnamon
2 tsp. baking soda
3/4 tsp. salt
1 c. hot coffee

Cream together sugar, shortening. Add beaten eggs. Stir in apples, vanilla, butter, black walnut flavorings. Sift together flour, cinnamon, soda and salt. Add to mixture alternately with the coffee.

For topping mix together 2/3 cup brown sugar and 1/2 cup chopped nuts. Spread over batter in 9 x 13 inch pan (greased and floured). Bake at 375 degrees for 40 to 50 minutes.
