RAW APPLE CAKE 
4 c. raw, diced Pippin apples
2 c. sugar
2 eggs
1/2 c. vegetable oil
2 c. flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 c. chopped walnuts

Peel, core, and dice apples. Add sugar, eggs, and oil; mix together and set aside. Sift together flour, baking soda, salt, and cinnamon. Stir into apple mixture; add chopped nuts. Pour into greased and floured 9 x 13 inch pan. Bake at 350 degrees. Test with toothpick in about 45 minutes. Bake until done. May be served warm or cooled. Can top with whip cream or delicious just plain. Cover with foil when cooled. Good made ahead as it becomes moist.
