MAIMIE'S PORK RIND CASSEROLE 
1 lb. bacon, fried and chopped
1 (10 oz.) can cream of mushroom soup
1 large bag of small-size pork rinds (your favorite)
1 (6 oz.) can French's fried onions
6 to 9 corn or flour tortillas
1/2 lb. sausage, cooked

Cook bacon and sausage. Grease the bottom of a 9x13-inch casserole dish with bacon fat. Line with tortillas.

Mix bacon, sausage, French's fried onions, cream of mushroom soup and pork rinds, reserving some onions and pork rinds for the top after baking. Fill dish with mixture.

Cover with foil and bake at 325°F. Remove foil and bake for another ten minutes at 350°F.

Top with additional pork rinds and French's fried onions.
